Description
Black-eyed beans are lovely in soups, stews, and casseroles. Simple, and quick, to cook.
Soak in plenty of cold water for at least 8hours. Drain & rinse. Cover with fresh water and bring to the boil. Simmer until tender (approx. 1.5hours). Drain season.
